Dextrose cooking is based on cooling crystallization after vacuum evaporation. After adding seed crystals, use vacuum to adjust evaporation temperature, control supersaturation, control crystal growth and precipitation of crystal nuclei, and continuously add unsaturated solution to supplement solute amount to make the crystals grow. The whole device includes four parts: heating chamber, evaporation chamber, gas-liquid separation chamber, and agitator. The agitator is a propulsive blade to promote the circulation of sugar solution.
Vacuum dextrose cooking system can be applied in the production of DAH.
